Mas Cavalls Pinot Noir

DO: California; Sonoma

Vinification: The grapes were harvested between September 10th and 23rd. After minimal crushing, they fermented in stainless steel tanks, without any whole clusters. The wine aged in premium French oak barrels (36% new) made by the cooperages Remond, from the Bertranges forest, and Marchive and Rousseau from central France. Bottled in August 2014 without filtering or clarification.

Clones: The vineyard’s 8 hectares of Pinot Noir are planted with three different clones. The blend of clones in this vintage is 56% Pommard, 25% Dijon 667 and 19% Dijon 115.
Tasting note: Elegant nose with classic varietal aromas of wild cherry, clove and sandelwood harmoniously combined with the characteristic forest floor notes of this exceptional vineyard. Supple, generous tannins and a round, complex, fleshy palate. Best served at cellar temperature, between 14–15ºC.
