Grapes sourced from some of the most select vineyards in the La Matte region of Provence, mostly Grenache, Rolle (Vermentino) and Cinsault.
Harvested between dawn and midday.
Destemmed and gently crushed at 7–8°C to avoid oxidation.
The free-run juice and pressed juice are vinified in stainless steel.
